Pale straw colour with a light green hue.

 

Bouquet

Restrained apple, brioche and nougat with a mineral presence

 

Palate

Complexities of apple, brioche, and white nougat followed by a soft mazipan and minerality with plenty of spritz that slips away far too easily and is very morish.

 

Suggetsed Cuisine

Fantastic as an apperitif or served with white mould cheeses, dried fruits and panna croccante. Serve chilled in a fine champagne flute or white wine glass.

 

Season Conditions

Season 2016 was dry and temperate offering a favourable maturation period and excellent ripening conditions producing an expressive cider with natural acidity.

 

Fruit Selection

Pink Lady apples sourced from our Biota Orchard in Harcourt, Victoria planted in 1996. The soils are well drained grey loam with decomposed granite.

 

Hand-picked in the cool mornings across several days and kept in controlled atmospheric refrigeration where further maturation continues for six weeks.

 

Fermentation

Hand sorting eliminates sub-standard fruit it is milled, cold pressed and chilled overnight before being racked into stainless steel tanks for inoculation with select yeast for fermentation.

Careful control and monitoring of fermentation allows for a cool and moderate ferment to retain freshness and aroma; at a precise time the ‘arrest’ of the ferment by instantly chilling and adding SO2 is conducted to arrive at the desired alcohol and residual sugar levels. The cider is racked off gross lees, filtered and prepared for bottling.
